  • Boil kaala chana until tender; toss with chaat masala, cumin, and black salt.
  • Prepare roasted-garlic hummus (blend chickpeas with tahini, lemon, roasted garlic).
  • Fry okra into kurkuri bhindi until crisp; drain.
  • Spread hummus on plate; top with spiced chana, olives, sundried tomato, and chutneys.
  • Warm soft kulcha and serve alongside; garnish with kurkuri bhindi.
